Caramel Apple Pie Recipe (Samantha Dobbs)
3 - 4 Granny Smith Apples
2 1/2 C Flour
2 sticks butter (cubed and cold)
1 tsp salt
1 tsp sugar
6-8TBSP ice water
Whipped cream cheese:
8 oz cream chees (room temperature
2 TBSP vanilla
2 C oatmeal
1 1/2 C brown sugar
1 C flour
2 TBSP cinnamon
1 C sugar
1/2 C water
1/2 C cream
2 TBSP butter (cold)
Apple instructions: peel and core apples. Cut into quarters. Slice quarters into pieces 1/8th inch thick by 1 inch in length
Pie crust instructions: mix together floud, sugar and salt. Using whisk, smash in the butter until the flour and butter have made little chunks. Slowly add ice water 1 TBSP at a time until the mixture starts to blend together (you may or may not need all the water. Dough should hold together when pinched between your fingers. Roll into a ball, place into bowl and immediately store in fridge until ready to use. Cut dough into two even pieces. Roll out into two even pieces large enough to cover your pie pan and to your desired thickness. Place one piece into pie pan. Using remaining pie dough, cut into 1/2 inch strips. Begin lattice work on a well floured surface and hold in fridge until the rest of the pie has been assembled.
Whipped cream cheese instructions: Place the room temp cream cheese into a mixing bowl. Use a hand mixer to whip the cream cheese until light and fluffy. Add vanilla and mix until all blended. put mixture into piping bag.
Crumble instructions: in a bowl, mix together the oatmeal, flour, brown sugar and cinnamon until combined.
Caramel instructions: Place wate and sugar into a medium sauce pan and cook out the water until it is a nice brown color. Remove rom heat when the appropriate color reached. In another pan, heat cream and add to sugar/water mixture - whisk. Add cold butterin small pieces and whisk mixture.
Pie assembly: place pie crust into pie pan then begin to layer with ingredients in following order;
one even layer of apples without overlapping
Sprinkle light layer of crumble mix over apples evenly
Using piping bag, draw a bull's eye pattern with the cream cheese. Should be approximately 1/2 inch in diameter for each ring. Leave about 1 inch gap between each ring, continuing until you reach the edge of pie.
Sprinkle another light layer of crumble over the cream cheese
Repeat process beginning with apples until youhave a 1/8 inch rim remaining (press down lightly to compact ingredients)
Top with caramel sauce
Finish pie with lattice dough
Bake at 350 degrees for 20-30 minutes or until apples are done
Finish by turning heat up to 400 degrees and brown top crust.
